Roasted or Grilled Beef Rib Eye Roast

With a sharp knife, make slits in the roast, all sides.  Insert garlic pieces into slits.  In a small bowl or glass 4-cup measure, combine bay leaves, consommé, wine, oil, and oregano, blending well.  Place roast in a deep large glass bowl or large plastic zip-lock bag; pour wine mixture over meat.  Cover or seal bag and refrigerate for several hours.  Drain meat from marinade, reserving marinade.  Arrange roast on a metal rack in a roasting pan.   Bake/roast in a preheated very slow (250 to 275 degrees F.), and add reserved marinade to pan.  Sprinkle roast with salt and pepper or seasoned pepper to taste, loosely cover, and continue baking/roasting until a meat thermometer inserted into the thickest part of the roast registers 140 degrees F. for medium rare beef, and 150 degrees F. for medium-done beef, about 15 to 20 minutes per pound.   Internal temperature of meat will continue to rise a few degrees after removing from oven.  Allow roast to rest several minutes before slicing.  Garnish with sprigs of oregano or other fresh , if desired. 

Out-door Grilling Instructions: Place roast on grill rack of lowest level of charcoal or gas grill (charcoal coals should be ash   gray and glowing and gas grill setting should be medium to high).   Sear meat 5 to 7 minutes on first side; turn (over) meat and sear 5 minutes.  Raise grill rack to highest level.  Move charcoal coals out to outer perimeter of grill area. (May need to add more charcoal during grilling; warm briquettes at outer edge of grill before adding to hot briquettes.  Turn gas grill to lowest cooking setting. Transfer meat to two sheets (a double thickness) of heavy-duty aluminum foil; bring up sides of foil to shape into a pan.  Pour reserved marinade over meat.  Close foil, sealing tightly.    Grill until meat thermometer inserted in thickest part of roast registers desired degree of doneness (140 degrees F. for medium rare beef and 150 degrees F. for medium-done beef, turning (over) roast in marinade/sauce frequently.  Serve as previously directed.

Note : May top hot coals with drained hickory chips that have been soaked in water to cover   thoroughly for 30 to 60 minutes.

Remove roast when meat thermometer registers 135° F for medium-rare, 150° F for medium. Let stand 15 minutes. Temperature will continue to rise to 145° F for medium-rare, 160° F for medium.) Carve into slices, serve with vegetables.
